TOFU ACTIVATION was a softly-Fluxist invitation to reimagine the experience of consuming an often-overlooked food: tofu. Before becoming Below Grand, the location was formerly a tofu production company. Taking a gastrophysical approach, I prepared and served various tofu dishes with the aim to disarm diner’s expectations.
